Super-Charged Chocolate Milkshake

My milkshake brings all the boys to the yard, and they're like - it's better than yours... it might be made of cauliflower, but it tastes like a chocolate milkshake - thick and creamy and chocolaty - and makes a super satisfying summertime breakfast or post-workout refuel. It's also packed with fiber, nutrients, and protein, and is low in sugar. 

The cauliflower might sound like an odd choice for a smoothie, but it is virtually undetectable when blended with all the other ingredients, and it creates a thick and creamy fiber-rich, anti-inflammatory and anti-cancerous, low-glycemic base for stable blood sugar. Stable blood sugar = stable mood and energy, and over-time a trim waistline. 

 

Super-charged chocolate "milkshake"

-1/2 C steamed and frozen cauliflower florets *(see tip below)

-1/3 C blueberries (fresh or frozen)

-generous handful of greens - I used dandelion this time around, but you could use kale, spinach, or any other greens you have on hand

-1 TB almond butter

-2 TB cacao powder

-1 scoop collagen powder (optional but increases the protein)

- 1 tsp maca powder (optional, this adaptogen is great for your adrenal glands and energy levels)

-pinch of stevia, or a small amount of honey or maple syrup to taste 

-almond milk or milk of choice - I'm a fan of  Califia Farms toasted coconut-almond

Method

Add all ingredients to your blender. Top with milk until covered. Blend, taste and adjust flavor/ingredients and re-blend as needed, and enjoy! 

*Chop and steam a whole head of cauliflower. Let cool, then freeze in individual portions in baggies....otherwise you'll wind up with a big frozen cauliflower rock, and have to hack off bits of it at a time to use! (Yes, I did this.)
