Chocolate Extravagance Avocado Mousse

You may love avocados in guacamole or toast form, but trust me when I say they make an excellent vessel for chocolate. This super rich and creamy chocolate avocado mousse is not only amazingly delicious and will satisfy even the most intense chocolate cravings, it's also crazy good for you.

Actual screen shot from the other day...Thankfully no, I did not scarf all the junky chocolate in my classroom. I waited til I got home, and made this mousse instead.

Cocoa powder provides a good dose of serotonin, the "happy" neurotransmitter and natural anti-depressant, and creates endorphins, our body's feel-good chemicals. (Hence why we often crave chocolate when we're stressed, depressed, have a broken heart, or have PMS...ladies I know you feel me.)  Additionally, chocolate/cacao contains magnesium, known as "the calm" mineral. The super rich and creamy avocado base, with a touch of coconut oil, is rich in heart-healthy Omega-3 fatty acids and fiber, which curb appetite (fat = satisfied), control blood sugar, reduce cholesterol, and encourage healthy hormone production. Healthy hormones are vital for stable mood and energy levels, and regulating weight.  I also added maca powder for an adaptogenic boost (I talk about the benefits of maca in this almond butter bliss ball recipe) and collagen powder for some extra protein.

Ingredients:

2 ripe avocados

1 rounded TB coconut oil

1/4 - 1/2 C cocoa powder (depending on how intense you want your chocolate - I go for the full 1/2 C)

1/4 C milk of choice (Almond, Coconut, or my favorite - Califia Farms Coconut-Almond milk)

1/4 tsp cinnamon

1/8 tsp salt

sweetener of choice: I used 5 TB monkfruit sweetener, and 1 TB maple syrup; experiment with somewhere in the ball park of 2 - 6 TB of maple syrup, a pinch stevia, or a combination to see what pleases your palate

Optional Boosters:

2 tsp maca powder for an adaptogenic mood & energy boost

2 TB collagen powder for a protein boost

Method:

Scoop the avocado flesh into the bowl of a food processor or blender.  Add the remaining ingredients, and blend well, stopping a few times to scrape the sides of the bowl. You do not want any avocado chunks hiding out in there! Chill for 1 hour or overnight. Ta-da! Rich, chocolatey goodness, that's also healthy.

Top with sliced strawberries, cacao nibs (shown here), coconut whipped cream, or whatever your heart desires.

Let me know in the comments below how much you love it! ... Or who you fed it to that had no idea they were consuming avocados ;)
